Our wines

To explain our wines we have to first explain our vineyard. A total of 2 hectares on the slopes of the Miño River spread over two estates: Pena Bicada of 1.5 hectares and O Souto of 0.5 hectares, which give their name to our wines. Our vineyards only have native varieties planted in weathered granite rock soil (xabre). The orientation of the vineyard towards the North protects the grapes from the intense summer heat, guaranteeing optimal ripening conditions. The terraces in the highest areas of Pena Bicada allow better ventilation and distribution of humidity in the ground.

We work hard all year round to ensure that each vine is in the best condition. During the harvest we carefully manually choose the best of each plant and each bunch. The result is wines in very limited quantities that transmit the personality of our varieties, the richness of our soil and the delicacy of our work, all of this marked by the weather of each harvest that makes each bottle a unique experience.

With this wine we aim to obtain the maximum expression of our castes, for which we make each one separately at its exact moment of maturation and then blend it in the proportions we consider most appropriate. The result is a complex and multi-hued wine, with a long journey and at the same time friendly and inviting to enjoy a bottle in good company.

A unique vintage of one of our favourite varieties that is presented without the need for any complement. Freshness, complexity, intensity and varietal typicity at levels difficult to repeat. It is also the first of our wines to be made entirely under organic viticulture criteria.

This wine is simply unrepeatable. It is a spontaneous fermentation, a self-made wine with no intervention from our side. It is the result of a long process, almost geological, in which our only merit is to step aside and wait. A deep, long, complex wine with a nostalgic twist that takes us to an ancient time where nature and its rhythm ruled everything.

We intend to go one step further to get to know our vineyard and our varieties and obtain a self-made wine without intervention in the winery. The result is a different wine, with multiple nuances, with the freshness and richness of our varieties and with its own personality.

White wine

For a special occasion. The structure of Treixadura and the aromatics of Loureira grow exponentially in complexity and intensity during barrel ageing. A well-balanced acidity and the work of the lees provide freshness, creaminess and smoothness that complete a tasty, subtle and rounded wine.

We intend to take our varieties a step further by incorporating the use of barrels in fermentation and aging. The result is a wine in which the fruit continues to predominate but which multiplies its intensity and complexity through soft notes from the wood. It is a long and fresh wine with enormous storage potential.

Vineyards 15 years old, weathered granitic rock soil, trellised conduction system.
Fermentation begins in stainless steel tanks at a controlled temperature with native yeasts. Halfway through fermentation it is transferred to first-year French oak barrels in which it rests with its lees for 4 months.
Aged in barrels on lees with “bâtonnage” for 4 months. Rest in INOX with lees for 2 additional months. Aging in bottle for 12 months before marketing.

Without a doubt our most special, complex and unique preparation. A wine based on the ancient history and tradition of Ribeiro and considered one of the best wines in the world. No detail is left without meticulous control throughout the entire process: harvesting, drying, fermentation and aging. A titanic and continuous effort that results in a wine that is impossible to describe simply with words.

We intend to recover one of the most prestigious and laborious elaborations of the Ribeiro. It is an extraordinarily complex, long and round wine. The multiple aromas of nuts, honey, toast and candied fruit are concentrated and multiplied thanks to the passage through the barrel. The balance between sweetness and bitterness makes it the perfect wine for an aperitif or dessert. This is without a doubt our most special preparation.
Low rainfall, concentrated in the autumn and winter months. Late spring and hot and dry summer which favors good health of the vineyard and slow and balanced ripening. We arrived at harvest with a harvest of exceptional quality and with a small quantity of grapes.
Vineyards 25 years old, weathered granitic rock soil, trellised conduction system.
An exhaustive selection is made of the best 10,000 clusters from our vineyard. These bunches are hung one by one in a covered room that is ventilated strictly naturally. For a period of between 5 and 6 months, the bunches are inspected daily to discard all those that are not in perfect condition. Once the raisining process is complete, the bunches are exhaustively selected again while they are picked, destemmed and pressed. Fermentation begins in an INOX tank at a controlled temperature and with native yeasts. Once fermentation has started, the must is transferred to 100-liter oak barrels in which it completes fermentation and rests with its lees for a minimum of 8 months. Once bottled, an additional aging of 12 months is carried out before marketing.

The use of a good base wine allows us to maintain freshness and acidity, in turn complemented by the mixture of herbs that provide power and aromatic complexity: herbaceous, nuts, spices and toasted that translate into a wide spectrum of sensations. The final product is slightly sweet with a bitter aftertaste that invites you to enjoy it as an aperitif or with a good dessert.

The base wine is the leftover blend of our plurivarietal, Celme de Pena Bicada. Each variety is made separately at its exact point of maturation and mixed two months before beginning the vermouth making process. On the other hand, a selection of wild aromatic herbs collected in the vicinity of our vineyard is made and dried for a period of between 1 and 2 months: lemon verbena, mint, orange, lemon, bay leaf, oregano and thyme. This selection is complemented with a combination of plants and spices of organic origin: cinnamon, cloves, cardamom, gentian, tea and licorice among others. The mixture of herbs and spices is infused directly into the wine for approximately 6 months in which the proportions of the different aromatics change depending on the result of frequent organoleptic analyses.
